From the Photographer... "Our winter wedding inspiration shoot captures an elegant snow day with real life engaged couple Jamie and Regina. Set in a beautiful creekside forest on Mount Hood, the historic Steiner Log Cabin was the perfect backdrop for white roses and forest greens. We envisioned an intimate setting where the couple could spend quiet moments at a silver and gold tablescape, immersing in the lush greenery of Oregon. Antique toboggans served as the display for a lettered invitations suite, and a soft buttercream cake set an elegant tone while the couple warmed their hands and hearts with a spicy spiked cocoa cocktail. Regina's glamorous makeup and soft curls looked perfect in the afternoon light as she and her husband-to-be frolicked in the snow."

To make your own Mexican Hot Chocolate:

INGREDIENTS

  • 2 oz. Coffee Rum (We recommend the one from Eastside Distilling)
  • 4 oz. Cream-on-top whole milk, such as Organic Valley
  • 1/2 bar Woodblock Chocolate 70%
  • few slices candied ginger
  • few whole cloves
  • few cinnamon sticks
  • whipped cream
  • chili powder

Grind or grate chocolate bar into a small bowl, then add all spices. Combine with milk in a saucepan and simmer, whisking for two minutes. Strain into a glass mug and stir in coffee rum. Garnish with whipped cream and a pinch of chili powder, and enjoy!
